Cucumber, Tomato & Dill Summer Salad
With summertime comes a lot of tomatoes and cucumbers, either from your own garden or a garden of a friend or family member. Instead of bemoaning the abundance, I like to make a lot of salads with these delicious produce items. The recipe I am sharing today is one of my favorites. It works well as a light lunch or as a side dish for dinner. This is also a great dish to take to a picnic or summer party.
Ingredients:
- 2 cups chopped tomatoes (any type of tomato works well for this salad)
- 4-6 cucumbers (depending on side) peeled and chopped or sliced
- ¼ cup chopped red onion (optional)
- 2 tbs. chopped dill weed, or more if you prefer
- ½ cup crumbled feta feta cheese
- 2 tbs. olive oil
- 2 tbs. red wine vinegar
- Freshly ground salt and pepper
Instructions:
- Mix together tomatoes, cucumbers and onions
- Add dill weed and stir
- Whisk together olive oil and red wine vinegar then pour over the salad mixture
- Add salt and pepper to taste
- Top with feta
- *Feel free to add more or less of each ingredient to make certain flavors more magnified
