Partner content: What to Eat When You Don’t Feel Like Cooking

We all have those days when we get home and just don’t feel like making dinner, but of course we still need to eat. What do you do? Do you hit the drive through? Go out for dinner? Make a meal of leftovers?

Or do you try and get creative with items you have on hand or resort to some easy pantry/fridge/freezer staples to make a quick meal?

Here are a few ideas:

• Peanut butter and banana sandwich. Pair with a soy alternative milk, cow’s milk or a higher protein milk.

• Scrambled eggs. Add some grated cheese to up the protein and chopped fresh vegetables like spinach, tomatoes, zucchini. (optional: Have this with a slice of whole wheat toast or roasted potatoes)

• Fried egg sandwich on toast

• Cereal. Don’t knock it! A whole grain cereal that’s low(er) in added sugar (less than about 8 g/serving) can be a quick meal solution, especially if you add in some chopped fruit and nuts and maybe have it as a parfait with plain or vanilla Greek yogurt.

• Rotisserie chicken. Make a quick stop at your local Ingles and pick up a rotisserie chicken, some pre-cut veggies and your favorite dip for a tasty dinner.

• Tuna or Salmon salad sandwich on toast

• Grilled cheese sandwich with soup.

• Beans and Rice. Drain a can of black or red beans, heat them in the microwave, and add to cooked rice. Top with salsa and grated cheese.
