Partner content: “Struggle Meals”
One thing I’ve been noticing lately on social media is a reference to “struggle meals”. These are easy, economical meals to make when money (and time) is tight. Often these meals start out with staple foods with protein like beans, cheese, canned tuna, peanut butter and eggs and then add in or have with starches and vegetables.
Here are some ideas of typical “struggle meals:”
• Beans — You can mash beans onto a tortilla, add rice and cheese, and salsa, roll it up and turn it into a burrito. Make chili with ground meat ( can be ground chicken, turkey, pork or soy crumbles) and add in sweetpotatoes.
• Cheese — Cheese quesadillas or grilled cheese sandwiches.
• Eggs — Scrambled eggs with cheese. Make an omelet or frittata with leftover cooked vegetables and cheese. Cook ramen noodles, add in stir fry vegetables and top with a scrambled or poached egg
• Tuna — Tuna sandwiches . Add a can of tuna to cooked hot noodles, or boxed macaroni and cheese and mix in fresh or frozen vegetables.
