DYK that North Carolina is the top the sweetpotato (and yes, it’s one word!) growing state in the US?

Sweetpotatoes are a good source of beta carotene and complex carbohydrates (and fiber)

Here are 5 things to do with sweetpotatoes:

• Scrub and slice into wedges or rounds, drizzle with olive oil or canola oil and seasonings of your choice and roast in a hot oven.
• Make baked sweetpotatoes and stuff with black beans and sour cream.
• Use in soups, stews, casseroles or chili in place of white potatoes to make slightly sweeter versions of a recipe.
• Boil and mash sweetpotatoes and use in pancakes or to make sweet breads.
• Make a smoothie - Boil (or microwave) and puree sweetpotatoes and make into a smoothie by adding milk (or non-dairy milk), vanilla protein powder, vanilla extract maple syrup, cinnamon.
